Paradise for Rent: Mojito Recipe

Why is it that 4 day work weeks are always the LONGEST work weeks?  In that it’s a Friday and the sun is shining (at least here) we felt the need to share with you a mojito recipe that will last you all weekend long – or depending on your week, maybe just tonight!

The first part of the recipe is the key to making a perfect mojito – it takes just a teeny bit more time, but it’s totally worth it – we promise.

Mojito


Mint Syrup
-Combine 1 cup of water and 1 cup of sugar in a sauce pan and heat to a boil – stir frequently until the sugar dissolves.  It will go from a somewhat cloudy appearance to a clear appearance
-Once the sugar is fully dissolved remove from heat and add two handfuls of (clean) spearmint (don’t use furry mint) – and throw in a handful of lime wedges
-Cover and let steep for an hour
-Remove mint and lime wedges
-Pour into a container that has an airtight lid (so you can store for later in the fridge!)

Mojito
-Pour 1oz. of the mint syrup into a tall glass
-Add a couple of mint sprigs and muddle together with a spoon
-Fill the glass almost to the rim with crushed ice – muddle together with a spoon again
-Add 1 ½ to 2 oz. of rum
-Fill the rest of the way with soda water and stir
-Top with a sprig of mint and a lime wedge

Our favorite way to enjoy it:
-In lieu of a tall glass pull out your blender
-Add 1 oz. of mint syrup to the blender
-Add 1 ½ - 2 oz. of coconut rum
-Add about 3 cups of ice
-Blend until slushy
-Now pour into a tall glass!
-Top with sprig of mint and a lime wedge

  1. The actual Cuban recipe also uses spearmint, which is quite popular on the island of Cuba. Mojitos are popular summer drinks, and also have a relatively low alcoholic content. mojito recipe ideas
